Ingredients

Instructions

  1. Line a baking sheet with a cooling rack. Heat about 1 inch of neutral oil in a large skillet to about 350°F (175°C).
  2. Fry one tortilla at a time: after about 10 seconds it softens, so flip it and fold it in half, holding the middle with tongs to form a pocket. Once it holds its shape after about 10 more seconds, keep frying, turning as needed, until crisp and golden all over, 1 to 2 minutes.
  3. Drain the shells on the rack and season lightly with salt. Repeat with the remaining tortillas.
  4. For the filling, heat 2 tablespoons neutral oil in a large skillet over medium heat. Add the ground turkey and onion and crumble with a wooden spoon until the turkey is lightly browned, 3 to 4 minutes. If there are many juices, raise the heat to reduce them.
  5. Add the tomato paste, chili powder, cumin, paprika, garlic powder, oregano, cayenne and 1 teaspoon salt, and stir to coat the meat.
  6. Add the beer and vinegar. Bring to a vigorous simmer and cook until very thick, 8 to 10 minutes.
  7. Spoon the filling into the shells and add your toppings.
