MOM'S SECRET HAM & POTATO CROQUETTES Recipe!
Ingredients
- Potato1 kg
- Parsley
- Pecorino cheese3 tbsp
- Ham
- Mozzarella cheese
- Egg2
- Nutmeg1 tsp
- Breadcrumb
- Salt
- Black pepper
- Sunflower oil
Instructions
- Wash the potatoes, cut them in half, leave the skin on, and boil them in a large pot of water on medium-high heat for 20 minutes.
- Meanwhile, dice the ham and mozzarella into small cubes.
- Let the potatoes cool slightly while still warm, then press them through a ricer into a bowl and let them cool for another 5 minutes.
- Add the parsley, pecorino, salt, a generous amount of pepper and one egg to the mashed potato, then mix with one hand until well combined.
- Wet your hands, flatten a portion of potato, place the mozzarella and ham filling in a dent, close it, and roll into a log with square ends. Set on a tray lined with baking paper and repeat with the rest.
- Coat each croquette in beaten egg and breadcrumbs, making sure it is fully covered, then rest them so they firm up. On a hot day, cover them and refrigerate for 30 minutes.
- Heat oil in a large pot on medium-high heat.
- Fry five croquettes at a time, stirring gently, for 3 minutes or until golden brown.
- Remove with a slotted spoon, drain on a plate lined with paper towels, and repeat until all are cooked.
