Monkfish recipe ("Poor Man's Lobster") with Herb Brown Butter
Ingredients
- Monkfish300 g
- Extra virgin olive oil1 ½ tbsp
- Salt¼ tsp
- Black pepper0.13 tsp
- Butter2 tbsp
- Garlic2
- Thyme2 sprigs
- Parsley½ tsp
- Chive½ tsp
- Chervil½ tsp
Instructions
- Cut each monkfish into 3 or 4 pieces of even size.
- Season both sides of the fish with the salt and black pepper.
- Set a rack over a tray if you want a place to rest the fish later (optional).
- Heat the oil in a non-stick pan over medium heat (medium-high on a weak stove).
- Put the thickest pieces of fish in the pan first. After 1 minute, add the thinner pieces. Cook 2 more minutes, then flip the fish.
- Add the butter to the pan. Once it begins to melt, add the garlic and thyme. When the butter foams, tilt the pan and spoon butter over the fish for 2 minutes, or until the fish reaches 55°C/131°F inside or flakes easily. The butter will smell nutty and turn brown.
- Move the fish to the rack and rest it for 3 minutes.
- Add the parsley, chives and chervil to the butter left in the pan. Serve the herb brown butter with the monkfish.
