Monster Cookies!
Ingredients
- Flour1 cup
- Oats1 ½ cups
- Baking soda1 tsp
- Salt¼ tsp
- Butter125 g
- Peanut butter¾ cups
- Egg1
- Vanilla1 tsp
- Brown sugar1 cup
- M&Ms1 cup + 3 tbsp
- Dark chocolate chip10 tbsp
Instructions
- Preheat the oven to 350°F (180°C, or 160°C fan). Line 3 trays with baking paper.
- Mix the flour, oats, baking soda, and salt in a medium bowl with a wooden spoon until just combined.
- Melt the butter in a microwave-safe bowl in 20-second bursts until almost melted, then stir until fully melted. Add the peanut butter, egg, vanilla and brown sugar and mix until smooth.
- Stir the dry mixture into the butter mixture until most of the flour is mixed in. Add the chocolate chips and M&Ms and mix until no flour is visible.
- Scoop out 18 balls of dough, each about 3 tablespoons. If the dough is too sticky, chill it for 5 minutes. Place the balls on the trays at least 3 inches apart.
- Bake two trays for 15 minutes, swapping the shelves at the 8-minute mark. While still hot, press extra chocolate chips and M&Ms onto the tops, if you like.
- Cool on the tray for 10 minutes, then move to a rack for another 10 minutes. Bake the third tray the same way. Once fully cooled, store in an airtight container for up to 5 days in a cool pantry.
