Preparación

  1. Wash the moong dal until the water runs clear, then soak it for an hour. Drain, and grind the dal in a blender with the ginger, chilli, cumin seeds, salt and water into a fine batter. Transfer to a bowl and check that it is not too thin.
  2. Chop all the topping vegetables in a blender, then transfer them to a bowl. Add the grated paneer, coriander and spring onion greens and stir well.
  3. Heat a tawa over high heat. Sprinkle water on it; when it sizzles and evaporates within seconds, it is ready.
  4. Pour a ladle of batter onto the tawa and spread it into a dosa-style round. Spread the topping evenly over it and press gently so it stays together.
  5. Season the top with salt, black pepper and ghee. Cook over medium heat until the bottom is light golden brown, then flip and cook the other side for 2 to 3 minutes until the vegetables are cooked.
  6. Flip the cheela once more, roll it, move it to a chopping board and cut it into pieces.
