- Olive2 tbsp
- Red onion · chopped diced⅔ cups
- Rice1 cup
- Chickpea · rinsed drained1 can
- Cumin1 ½ tsp
- Paprika1 tsp
- Allspice½ tsp
- Cayenne pepper½ tsp
- Chicken stock1 ½ cups

Instructions
- Heat a nonstick skillet sprayed with olive oil over medium heat. Sear the chicken chunks until the outside is no longer pink and the edges are browned, about 6 to 8 minutes; it may still be undercooked inside. Set the chicken aside.
- Return the skillet to the heat with the olive oil. Cook the red onion for about 3 minutes until browned and somewhat translucent.
- Add the rice, chickpeas, cumin, paprika, allspice and cayenne. Stir so the rice and chickpeas are fully coated in oil and spices, and cook for about 3 to 5 minutes.
- Pour in the chicken stock and bring to a boil. Add the raisins and the chicken, then reduce to low-medium heat, cover and cook for about 20 minutes, until the rice is soft but not mushy.
- Stir well and season to taste with sea salt and pepper.
- Garnish with freshly chopped parsley.
