Ingredients

Instructions

  1. Thinly slice the red onion, dice the garlic and ginger, finely chop the green onions and halve the ghost peppers.
  2. Toast the cinnamon stick, star anise, cloves, cardamom pods and sesame seeds in a saucepan over medium heat for 3 to 4 minutes, then set aside.
  3. Heat the avocado oil in the saucepan for a minute or two. Carefully add the red onion, garlic, ginger and ghost peppers.
  4. Fry for 4 to 6 minutes, then transfer to a paper towel-lined plate and spread out to keep them crisp.
  5. Add the green onions and toasted spices to the oil. When it starts to bubble, add the gochugaru and salt and cook for about a minute.
  6. Lower the heat to medium low and simmer for about 15 minutes.
  7. Turn off the heat and let the oil cool, then strain through a sieve into a jar, keeping the cinnamon stick and ghost peppers in the bottle.
  8. Store in the fridge for up to 4 to 6 months.
