Ingredients

Instructions

  1. Slice the beef into 1/8-inch slices.
  2. Season the beef with 2 tsp cornstarch, 1/3 tsp baking soda, 2 tsp dark soy sauce and 1/4 tsp salt, and mix well, separating the slices so the seasoning reaches every side.
  3. Drizzle in 1 tbsp cooking oil and mix to coat the beef, then let it rest for 15 minutes.
  4. Meanwhile, skewer the green chili peppers on 2 skewers and roast them over an open flame, about 2 minutes per side, until the surface is charred. A torch can be used without a gas stove, on a heat-proof plate.
  5. Scrape off the black skin with a paring knife, but leave some on for smoky flavour. Finely dice the peppers and set aside.
  6. Mix the sauce in a bowl: 1 tbsp oyster sauce, 1 tbsp soy sauce, 1.5 tsp brown sugar, 1/2 tbsp black pepper, 1/2 tsp cornstarch and 2 tbsp water.
  7. Heat a wok over high heat until smoking, then add a drizzle of oil and swirl it around.
  8. Add the beef and cook for 2 minutes, until well charred. Push it to one side, let the oil run to the other side, then add the garlic and Thai chilies and stir until fragrant.
  9. Add the roasted peppers and mix thoroughly with the beef.
  10. Stir the sauce to loosen the cornstarch, pour it into the wok and mix until it thickens. Serve with white rice.
