Ingredients

Instructions

  1. Put the add-ins (oats, sultanas, coconut, almonds, pepitas, sesame seeds, salt and cinnamon) in a large microwave-safe bowl and mix with a wooden spoon.
  2. Heat the peanut butter and honey in a saucepan over medium heat, stirring until smooth. Lower the heat to low once it is combined.
  3. As soon as small bubbles form around the edges, cook for 5 minutes, stirring constantly and scraping the base, until it is a very thick caramel. It is ready when a line drawn across the base holds before closing up. Do not leave it unattended, as it burns easily.
  4. Pour the hot mixture over the dry ingredients straight away and stir with the wooden spoon until everything is coated. If it becomes too stiff, microwave for 20 seconds on high, then mix again.
  5. Press the mixture firmly into a 20 cm (8 inch) square tin lined with a square of paper, spreading it into the corners. Press firmly for chewier bars.
  6. Refrigerate for 2 hours until firm, then cut into 10 bars.
