Ingredients
- Lentil1 ½ cups
- Rice1 cup
- Olive oil⅓ cups
- Vegetable oil⅓ cups
- Salt1 ½ tsp
- Baharat½ tsp
- Onion3
- Vegetable broth5 cups
Instructions
- Put the lentils in a large saucepan with 4 cups of stock or water, the salt and the baharat. Bring to the boil and keep boiling for 15 minutes.
- Meanwhile, thinly slice the onions. Cook them in a saucepan with both oils for about 10 minutes, until caramelised and golden brown.
- After the lentils have boiled for 15 minutes, add the rice, 3/4 of the caramelised onions and 1 cup of stock or water to the lentils. Set the remaining onions aside for serving.
- Cover and simmer on low heat for another 15 minutes until the rice is cooked. Tip: you can turn off the heat after 10 minutes, keep the lid on and let the steam finish cooking the rice.
- Serve warm or cold, topped with the reserved caramelised onions.
