- Radish · dried½ cups
- Soy sauce1 ½ tbsp
- Maple syrup1 tbsp
- Chili powder1 tbsp
- Garlic1 tsp
- Scallion1
- Chili pepper1
- Sesame seed¼ tsp
- Sesame oil¼ tsp
- Vegetable oil½ tsp
Instructions
- In a bowl, mix 1 Tbsp soy sauce with 1/2 cup water. Soak the dried radish in this liquid for 30-40 minutes until soft but still slightly chewy.
- Meanwhile, cut half a green onion on the diagonal, chop the garlic (1 tsp) and thinly slice the green chili pepper.
- Drain the radish and discard the soaking liquid.
- Heat 1/2 tsp vegetable oil in a small pan over medium heat and sauté the radish for about 1 minute, just enough to remove its raw peppery taste without browning. Remove from heat and let it cool in a bowl.
- Add the maple syrup to the cooled radish and mix well with your hands.
- Add the gochugaru, 1 1/2 tsp soy sauce, the chopped garlic and 2 tsp to 1 Tbsp water, and mix well, massaging with your hands.
- Add the green onions and chili peppers and mix again.
- Before serving, sprinkle with toasted sesame seeds and drizzle with sesame oil if using.
