Ingredients
- Button mushroom1 ½ cups
- Cashew¼ cups
- Onion1
- Tomato1
- Garlic · paste1 tsp
- Chili pepper1
- Curry1–2 sprigs
- Cumin½ tsp
- Oil2 tbsp
- Chili powder¾ tsp
- Turmeric0.13 tsp
- Garam masala1 tsp
- Salt⅓ tsp
- Lemon1 tsp
Instructions
- Heat the oil in a pan and add the cumin seeds. When they sputter, add the ginger garlic paste and sauté on medium heat until fragrant, without burning.
- Add the onions and green chili, if using. Stir-fry until evenly browned but not burnt. Meanwhile, rinse and chop the mushrooms.
- Add the tomato and stir-fry until its moisture dries up and the raw smell is gone.
- Add the red chili powder, garam masala, curry leaves and turmeric. Sauté until the mixture is aromatic and thick.
- Add the mushrooms, drained cashews and salt. Stir-fry on high heat until you smell roasted masala and mushrooms.
- If the masala sticks, lower the heat and keep stirring. If the mushrooms release liquid, turn the heat to high and stir-fry. Cook until the mushrooms are tender but not soggy.
- Turn off the heat, taste and add more salt if needed. Stir in the lemon juice, if using, and serve with rice, roti, chapati or bread.
