Ingredients

Instructions

  1. Make the stock: put the water, peppercorns and bay leaves in a pan, then add the carrot, celery, onion, halved garlic, a pinch of salt and the mushroom stems. Bring to a boil, simmer for about 20 minutes, then strain and return the stock to the pan.
  2. Make the soup: melt a dollop of butter in a pan, add the crushed garlic and chilli flakes and sauté until slightly translucent.
  3. Add the chopped mushrooms, salt and pepper and basil, then sprinkle in a little flour and a little butter. Once the mushrooms are cooked, set aside a small portion for garnish.
  4. Add the rest of the mushrooms to the strained stock, stir in the milk and simmer for 3 to 4 minutes, then stir in the cream and blend until smooth. Add a little butter and cream and blend again.
  5. Make the crouton: butter both sides of a thin round slice of bread, season with salt and pepper and crisp it in a pan. Top with the reserved mushrooms, grated cheese and a parsley sprig, and float it in the centre of the soup.
