- Five spice · powder½ tsp
- Garlic1 tsp
- Salt1 tsp
- Sugar½ tsp
- Chicken stock½ tsp
- Cornstarch4 tbsp
- Egg1
Instructions
- Cut the chicken breast in half lengthwise, slice, then cut into strips about 1/2 inch thick, and halve any long pieces to get strips about 2 inches long.
- Add white pepper, five spice, garlic salt, salt, sugar, bouillon, 1 tablespoon cornstarch and 1 tablespoon water to a bowl, add the chicken and mix by hand.
- Beat one egg yolk in a separate bowl. Mix it into the chicken just before frying.

- Blend the 0.5 teaspoon salt, 0.5 teaspoon garlic salt, 0.25 teaspoon five spice and 0.25 teaspoon white pepper in a small bowl for the seasoning.
- Heat oil in a wok on high to about 350°F, then lower to medium. Separate each piece by hand before adding to the oil.
- Fry in two batches for 2 to 3 minutes, until the strips just start to turn from pink to slightly golden. Remove with a spider strainer.
- Heat the oil to 380–400°F on high. Fry in two batches for about 30 seconds each, until much more golden brown. Remove with a spider strainer.
- Put the chicken in a mixing bowl and gradually sprinkle in the seasoning while tossing. Taste as you go and stop before it gets too salty.
