My Favorite Baked Mac and Cheese Recipe
Ingredients
- Noodle8 oz
- Butter6 tbsp
- Flour¼ cups
- Milk3 cups
- Salt½ tsp
- Black pepper · ground½ tsp
- Garlic powder1 tsp
- Onion powder½ tsp
- Mustard · ground½ tsp
- Cheddar cheese · shredded2 cups
- Mozzarella cheese · shredded1 cup
- Olive oil1 tbsp
- Panko1 cup
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta in well-salted water, one minute less than the package time. Drain, drizzle with about 1/2 teaspoon olive oil and toss.
- Melt 4 tablespoons butter in a 10-inch cast iron pan over medium heat. Whisk in the flour until smooth and lump-free.
- Add the salt, pepper, garlic powder, onion powder and ground mustard and whisk for 30-60 seconds.
- Add the milk and stir well; bring to a boil, stirring often, until the milk and butter combine. Then reduce the heat, simmer and stir until thickened.
- Reduce heat to low, add the cheddar and mozzarella and stir until melted and smooth. Stir in the drained pasta until well coated.
- For the topping, melt 2 tablespoons butter with 1 tablespoon olive oil in a small saucepan over medium heat. Add the panko and stir until the fat is mostly absorbed and the crumbs are light-medium brown.
- Sprinkle the toasted panko over the mac and cheese and bake uncovered at 350°F (175°C) for 15 minutes. Serve warm.
