My Favorite Cod Dish from San Sebastian
Ingredients
- Extra virgin olive oil¼ cups
- Cod2
- Flour¼ cups
- Garlic6 cloves
- Parsley · chopped¼ cups
- White wine1 ½ cups
- Shrimp12
- Salt
- Black pepper
Instructions
- Roughly chop the garlic. Pat the shrimp dry and season them with sea salt and black pepper.
- Pat the cod fillets dry and season with sea salt (if using regular cod fillets). Mix the flour in a shallow bowl with black pepper, then coat the cod fillets in the flour.
- Heat a large frying pan over medium heat and add the olive oil. When hot, add the floured cod and cook 3 to 5 minutes per side, depending on thickness. Remove and set aside.
- In the same pan, lower to low heat and add the chopped garlic, stirring it into the oil. After 1 minute, add the white wine and chopped parsley. Raise to medium heat and simmer for 3 minutes.
- Return the cod to the pan with the shrimp, all in a single layer. Cover with a lid and simmer for 2 minutes.
- Place the cod in serving dishes, arrange the shrimp around it, and spoon a generous amount of the garlic and parsley sauce on top. Serve immediately.
