Instructions
- Hard-boil the egg, peel it and set it aside.
- Whisk all the gochujang sauce ingredients in a small bowl until smooth. Set aside.
- Bring 8 to 10 cups of water to a boil with about 1 tablespoon of salt. Add the soybean sprouts, cover and cook for 4 minutes over high heat. Turn off the heat and leave them covered for 1 more minute. Lift out the sprouts, rinse under cold water and drain well. Keep the hot water in the pot.
- Bring the same water back to a boil. Cook the jjolmyeon noodles per package instructions, usually 3 to 5 minutes.
- Drain and rinse the noodles under cold water. Rub them gently with both hands for about 2 minutes to remove excess starch, then drain completely.
- Place the noodles in a serving bowl. Top with the sprouts, cabbage, cucumber and carrot. Halve the egg and set one half on top.
- Serve right away with the gochujang sauce, and mix well with chopsticks before eating.
