My Favourite Chocolate Frosting
Ingredients
- Dark chocolate chip200 g
- Heavy cream1 ¼ cups
- Cocoa powder¼ cups
- Butter100 g
- Sugar250 g
- Cream cheese250 g
- Salt¼ tsp
Instructions
- Heat the cream in a heatproof bowl until hot but not boiling. Add the cocoa and whisk until smooth, then rest 5 minutes.
- Melt the chocolate in the microwave in bursts: 30 seconds on high, stir, then 20-second intervals until smooth.
- Whisk the cocoa paste into the melted chocolate until smooth, then cool 15 minutes until it thickens. A skin may form; that is fine.
- In a large bowl, beat the butter until soft and fluffy, about 1½ minutes on high. Add the icing sugar and beat until it looks like wet sand, about 30 seconds. Add the cream cheese and beat about 30 seconds until smooth and no yellow butter bits remain.
- Beat in the chocolate mixture until combined.
- Cover and refrigerate for 2 hours until fridge-cold.
- Add the cold cream and salt, then beat on high for about 1½ minutes until stiff peaks form.
- Use immediately to frost or pipe. If frosting cakes, refrigerate at least 30 minutes to set before serving.
