Instructions

  1. Warm the milk in the microwave until lukewarm, about 100°F/38°C. Stir in the yeast until dissolved, then let it stand 5 to 10 minutes until it foams slightly and small bubbles appear. If there is no foam, the yeast is likely dead and should be thrown out.
  2. Mix the flour, salt and sugar in a large bowl.
  3. Pour the yeast-milk mixture and the beaten egg into the dry ingredients. Mix by hand until a shaggy, very sticky dough forms.
  4. Knead in the softened butter for about 5 minutes until fully incorporated (a stand mixer can be used).
  5. Turn the dough onto a floured surface, fold it over itself and shape it into a smooth ball. Return it to the bowl, cover and let rise 60 to 90 minutes until doubled.
  6. Divide the dough into 8 pieces of about 70 g each and shape each into a ball.
  7. Place the balls on a greased baking sheet, cover and let rise 60 to 90 minutes until doubled.
  8. Preheat the oven to 400°F/204°C. Bake the rolls about 10 minutes until golden brown on top and lightly browned underneath. For a check, the internal temperature should reach at least 203°F/95°C.
  9. Brush the warm rolls with melted butter. Optionally sprinkle with flaky salt or chopped rosemary.
