My Most Decadent Cake Yet...
Ingredients
- Cream cheese24 oz
- Sugar1 ⅔ cups
- Vanilla3 tsp
- Sour cream½ cups
- Egg5
- Oreo24
- Flour1 ¾ cups
- Brown sugar¾ cups
- Cocoa powder¾ cups
- Baking soda1 ½ tsp
- Salt¾ tsp
- Avocado1 cup
- Buttermilk1 cup
- Very hot or water or coffee½ cups
- Whipped cream2
Instructions
- Make the cheesecake at least 6 hours, or overnight, before assembling. Preheat the oven to 350°F (175°C). Line an 8-inch springform pan with parchment, folding it over the rim so it overhangs the sides.
- With the mixer on low, beat the softened cream cheese, sugar and vanilla until smooth and lump-free, scraping the sides as needed. Stir in the sour cream until combined.
- Add the eggs one at a time, beating just until mixed after each one and scraping down the sides. Stir in the broken Oreo pieces.
- Pour the batter into the prepared pan and bake at 350°F (175°C) for 40 minutes, until the edges are set and the centre is only slightly jiggly.
- Cool to room temperature, then refrigerate for at least 6 hours. Leave it in the springform pan until assembly.
- Make the cake: preheat the oven to 350°F (175°C) and grease and flour two 8-inch round pans.
- In a large bowl, whisk together the flour, both sugars, cocoa powder, baking soda and salt. Add the oil and stir well; the mixture may be dry.
- Add the eggs and vanilla and stir until combined. On low speed, gradually stir in the buttermilk until the batter is smooth.
- Add the very hot or boiling water or coffee (it must be steaming) and stir until combined, scraping the sides and bottom of the bowl as needed.
- Divide the batter evenly between the pans and bake on the centre rack at 350°F (175°C) for 35 minutes, until a toothpick in the centre comes out mostly clean or with a few moist crumbs.
- Cool the cakes in their pans for 10 to 15 minutes, then turn them onto a rack to cool completely.
- Prepare the frosting as the recipe directs. Once the cakes and cheesecake are fully cool, set one chocolate layer on a serving plate and spread a thin layer of frosting over it.
- Loosen the cheesecake from the springform rim with a knife, remove the sides, and place the cheesecake on the first layer. Pat dry any condensation, then spread a thin layer of frosting over the cheesecake.
- Top with the second chocolate layer. Frost the whole cake; if you like, press the pulverized Oreo crumbs onto the sides and sprinkle them over the top.
