Ingredients

Instructions

  1. In a large bowl, mix the mutton with the ginger-garlic-green chilli paste and turmeric until every piece is coated. For a smoky flavour, optionally place a small piece of live charcoal in a steel bowl set inside the mutton, pour a little ghee over it, cover immediately and let the smoke infuse for a few minutes; then remove the charcoal and set the mutton aside.
  2. Roast the onions, dry coconut and green chillies directly over a high flame on a papad jali until well charred, watching the coconut closely. Let cool slightly, peel off the burnt onion skin, then grind these with the ginger, garlic and a large handful of coriander with stems, adding a little water, to a fine smooth paste.
  3. Heat the ghee and oil in a heavy-bottomed kadhai over medium-high heat. Add the bay leaves, cinnamon, javitri, green cardamom, black cardamom and cumin seeds and let them crackle.
  4. Add the chopped onions and cook, stirring regularly, until deep golden brown.
  5. Lower the heat, add the Agri masala, turmeric and a splash of hot water, and stir and cook until the rawness goes away and the oil starts to separate.
  6. Add the ground paste and the whisked curd. Stir continuously until the masala is thick, crumbly and glossy, with oil separating from the sides.
  7. Add the marinated mutton and mix well. Cook on medium-high heat for 5 to 7 minutes until it starts to sear and release moisture. Cover and cook on low heat until it releases more juices and begins to soften.
  8. Add hot water as needed to form a gravy, cover, and cook on low heat, stirring occasionally, until the mutton is soft and tender.
  9. When the mutton is fully cooked, check the gravy consistency and adjust with a little hot water or by reducing it.
  10. Finish with garam masala, crushed kasuri methi, fresh coriander and a squeeze of lemon juice. Stir well and turn off the heat.
