Instructions

  1. Heat the ghee in a pot over medium heat. Add the semolina and roast for 2–3 minutes until fragrant, without browning.
  2. Pour in the milk, then add the sugar and cardamom powder. Stir constantly until the mixture thickens into a soft dough.
  3. Mix in the flour and take the pot off the heat.
  4. Let the dough cool until just warm enough to handle, then knead it lightly until smooth.
  5. Divide the dough into 10–13 small balls and flatten each into a disc.
  6. Steam the discs for 8 minutes, until set and firm.
  7. Bring the 2 cups of milk to a gentle boil in a pot.
  8. Add the condensed milk, sugar and slivered almonds. Simmer on low heat for 8–10 minutes, stirring often.
  9. Stir in the cardamom powder and the saffron milk, then turn off the heat.
  10. Let the ras cool until just warm, not hot.
  11. Place the warm semolina discs into the warm ras and let them soak for 30 minutes.
  12. Chill overnight for the best texture.
  13. Before serving, top with saffron strands, chopped pistachios and dried rose petals (optional).
