NEW Flavours! Roast Chicken Idea You Should Try At Home
Ingredients
- Whole chicken1 x 1.5 kg
- Garlic1 bulb
- Red wine vinegar
- Olive oil
- Bacon · smoked3
- Mushroom650 g
- Spinach250 g
- Green lentil2 x 400 g
- Crème fraîche100 g
- Tarragon½
Instructions
- Preheat the oven to 180°C/350°F (gas 4).
- Put the chicken and garlic bulb in a large sturdy roasting tray. Season with a pinch of sea salt and black pepper, drizzle with 1 tablespoon each of red wine vinegar and olive oil, and rub over the bird. Roast for 1 hour.
- Move the chicken to a plate and lay the bacon over the breasts. Mash the soft garlic out of its skins into the tray juices, then toss in the mushrooms, tearing any large ones.
- Return the tray to the oven, placing the chicken directly on the racks above it. Roast for another 20 minutes, until everything is golden and the chicken is cooked through.
- Transfer the garlicky mushrooms to a serving platter with a slotted spoon, and rest the chicken on top.
- Set the tray of juices over high heat, add the spinach, then drain and add the lentils. Stir until the spinach wilts. Off the heat, stir in the crème fraîche and season to taste.
- Pick the tarragon leaves over the chicken and serve everything together.
