NIGERIAN BEEF STEW || SHOP AND COOK
Ingredients
- Beef1200 g
- Salt1 ¼ tsp
- Stock cube2 tsp + ½
- Curry · powder1 ½ tsp
- Thyme3 tsp
- Garlic2 cloves
- Ginger1 piece
- Onion · chopped1 handful + ½
- Bell pepper5
- Tomato9–12
- Scotch bonnet1 handful
- Oil1 cup
- Boiled-down stew base
- Beef stock1 cup
Instructions
- Season the meat with onion, salt, curry powder, thyme, crushed garlic, grated ginger and crushed seasoning cube.
- Cover the pot and cook on low heat for about 10 minutes, until the meat releases its juices.
- Add enough water to cook the meat through, and simmer until tender.
- Separate the stock from the meat and set both aside.
- Rinse and deseed the peppers. Blend the bell peppers, tomatoes, Scotch bonnets and onion until smooth.
- Cook the blended pepper mixture in a pot over medium heat, uncovered, without stirring, until it thickens and the raw tomato taste is gone.
- Heat oil in a large pot and fry the cooked meat. (Alternatively, air fry it or leave it boiled.)
- Add chopped onion to the hot oil and sauté until soft and fragrant.
- Pour in the reduced pepper mixture and fry for a few minutes, stirring carefully as it splatters.
- Season with curry powder, thyme and the seasoning cube, and simmer for about 10 minutes.
- Cover halfway and fry for about 15 minutes, longer for a drier stew.
- Once the stew looks fried, stir in the reserved stock to loosen it, and cook for another 5 to 10 minutes.
- Add the cooked beef and simmer on low heat until oil rises to the top. Taste and adjust seasoning, then serve hot.
