Ingredients
- Beef3 lb
- Red onion1
- Salt1 tsp
- Chicken stock · powder4 tsp
- Thyme · dried1 ½ tsp
- Curry · powder1 ½ tsp
- Tomato6
- Bell pepper2
- Scotch bonnet1–2
- Olive oil1 cup
- Tomato paste8 oz
Instructions
- Put the beef chunks in a medium pot with half the diced onion, the salt, 2 teaspoons of chicken bouillon powder, ½ teaspoon thyme and ½ teaspoon curry powder. Stir, then heat on medium until simmering and cook for 5 minutes.
- Add 2 cups of water, cover, and simmer until the beef is tender, checking from about 15 minutes. Drain the beef and keep the stock.
- Blend the tomatoes, deseeded bell peppers, the onion chunks and the habanero peppers into a smooth paste or a chunky sauce.
- Put the blended mixture in a medium pot on medium heat and bring to a simmer. Cook without stirring for about 10 minutes, until most of the liquid has evaporated.
- Heat the oil in a large pot on high. Brown the beef in two batches, frying each side until browned, and remove it from the pot.
- Lower the heat to medium. Saute the remaining diced onion until translucent, add the tomato paste and cook for 5 minutes, stirring constantly.
- Add the reduced tomato-pepper mixture and cook for about 15 minutes, stirring from time to time.
- Stir in the remaining curry powder, thyme and bouillon powder, then add the reserved stock and the fried beef. Simmer for about 5 minutes, covering the pot if it splatters, and adjust the seasoning to taste.
- Serve warm over steamed rice.
