Nikumaki Onigiri Recipe - Japanese Cooking 101
Ingredients
- Rice2 cups
- Salt2 pinches
- Beef4–5
- Soy sauce1 ½ tbsp
- Sake1 tbsp
- Mirin1 tbsp
- Sugar1 tsp
- Oil1 tsp
- Sesame seed
- Lettuce
Instructions
- Mix the steamed rice with a couple of pinches of salt.
- Shape the rice into tight cylinders, about 1/2 cup each (a little less for smaller onigiri) and about three inches long, to make 4 to 5 rice balls.
- Wrap each rice ball in one paper-thin slice of beef so no rice shows.
- In a small bowl, mix the soy sauce, sake, mirin, sugar and water.
- Heat the oil in a frying pan over medium heat and cook the wrapped rice balls until the beef is browned all around. Add the sauce, turning to coat the beef, and cook until almost all the liquid is gone.
- Sprinkle with sesame seeds and serve with lettuce leaves if you like.
