Ingredients

Instructions

  1. Put the berries in a small saucepan with the sugar and the strained lemon juice. Cook over medium heat for about 10 minutes, stirring now and then, until soft and saucy.
  2. Strain the sauce through a sieve to remove the seeds. Set aside 2 tablespoons for the filling and let the rest cool completely.
  3. Soak the gelatine sheets in cold water for about 10 minutes.
  4. Finely crush the biscuits, then mix in the melted butter and honey until the texture is like wet sand.
  5. Press the mixture firmly into the bottom of a 20 or 22 cm springform pan lined with baking paper, using the base of a glass or a spoon.
  6. Chill the base in the fridge for at least 30 minutes, until firm.
  7. Beat the cream cheese with the icing sugar and vanilla until smooth and lump-free.
  8. Add the 2 tablespoons of strained berry sauce and mix gently.
  9. Squeeze the water out of the gelatine and dissolve it in a little warm cream or over a bain-marie. Let it cool for a few seconds, then quickly stir it into the cream cheese mixture.
  10. Whip the well-chilled cream until soft and creamy but not too stiff.
  11. Fold the whipped cream into the cream cheese mixture gently, using lifting motions to keep it light.
  12. Pour the filling over the chilled base, smooth the top with a spatula, and refrigerate for at least 6 hours, or preferably overnight, to set.
  13. Spread the fully cooled berry sauce evenly over the top.
  14. Decorate with fresh berries and serve well chilled.
