- Sriracha sauce1 tbsp
- Soy sauce5 tbsp
- Cucumber1
- Nori seaweed4
- Avocado · sliced1
- Furikake2 tsp
- Orange · juiced½
- Lemon · juiced½
- Honey1 tbsp
Instructions
- In a medium bowl, mix the drained salmon with the mayonnaise, Sriracha and soy sauce until evenly combined.
- Peel the cucumber and use a peeler to shave long, thin ribbons lengthwise, stopping when you reach the seeds. Repeat on all sides.
- On a sushi mat, lay a nori sheet and cover it with cucumber ribbons. About 2 inches from the bottom edge, spread 2 to 3 spoonfuls of the salmon mixture, then top with 2 to 3 avocado slices and sprinkle with furikake.
- Roll the nori and mat up from the bottom, tightly enclosing the filling, and continue until the end of the nori is reached.
- Moisten a knife on a damp paper towel and cut the roll crosswise into six equal pieces. Repeat with the remaining ingredients to make 4 rolls.
- Arrange the rolls cut-side up on a plate. Drizzle with Sriracha and mayonnaise and sprinkle with furikake.
- For the citrus soy sauce, whisk the soy sauce, orange juice, lemon juice and honey in a small bowl until smooth.
