No-Churn Homemade Strawberry Ice Cream Sandwiches on Oatmeal Cookie Bars
Ingredients
- Butter8 tbsp
- Brown sugar1 ¼ cups
- Salt1 tsp
- Vanilla4 tsp
- Egg3
- Flour1 ¼ cups
- Oats¾ cups
- Baking powder1 ½ tsp
- Cinnamon1 ½ tsp
- Nutmeg · ground¼ tsp
- Heavy cream2 cups
- Sweetened condensed milk14 oz
- Strawberry · dried powder, finely diced1 ¼ cups
Instructions
- Preheat the oven to 350°F (177°C). Line a 13 x 18 inch rimmed baking sheet with parchment and lightly grease the parchment.
- Melt the butter in a large microwave-safe bowl, then whisk in the brown sugar, salt and vanilla until smooth.
- If the mixture is too hot to touch, let it cool slightly. Add the eggs all at once and whisk until smooth.
- Stir in the flour, oats, baking powder and spices.
- Spread the batter evenly in the pan as a thin layer reaching the corners, using a small offset or flexible spatula.
- Bake for 12 to 14 minutes, rotating the pan halfway through, until the middle is set and the edges just start to turn golden. Cool completely.
- Whisk the heavy cream, condensed milk, freeze-dried strawberry powder, vanilla and salt on medium speed until medium peaks form. Fold in the diced strawberries.
- Cut the cookie bar in half crosswise into two pieces about 8 1/2 x 12 inches each.
- Line a 9 x 13 inch pan with plastic wrap, leaving plenty of overhang. Place one bar bottom-side up in the pan.
- Spread the strawberry cream over the bar, staying 1/2 inch from all edges.
- Top with the second bar, bottom-side down, pressing gently so the cream reaches the edges.
- Wrap the sandwich tightly using the overhanging wrap and freeze overnight or for at least 12 hours.
- Unwrap, trim the edges if desired, cut into bars and serve immediately. Store cut bars individually wrapped in the freezer for up to 3 months.
