No Fail Modak
Ingredients
- Ghee2 tsp
- Coconut2 cups
- Jaggery1 cup
- Cardamom · powder½ tsp
- Salt½ tsp
- Rice flour2 cups
Instructions
- For the stuffing, heat 1 tsp ghee in a large kadai and sauté 2 cups grated coconut until aromatic.
- Add 1 cup jaggery and mix well.
- Cook on medium heat until the jaggery melts and the mixture thickens but stays moist.
- Stir in ½ tsp cardamom powder. Set the stuffing aside.
- For the dough, bring 2 cups water, ½ tsp salt and 1 tsp ghee to a boil in a large kadai.
- Add 2 cups rice flour and mix gently until it absorbs all the water.
- Cover and rest for 3 minutes.
- Transfer to a large bowl and knead, wetting your hand to prevent sticking, for 5 minutes or until soft. Wet your hand and knead again if the dough seems dry.
- Shape by hand: flatten a ball of dough, press the edges with both thumbs to form a dent, then press from the edges to form a cup.
- Make pleats with your index finger and thumb, scoop 1 tbsp of stuffing into the cup, gather the pleats into a bundle and pinch the top into a point.
- Shape with a mould (optional): grease the mould with ghee, press dough into the mould walls, place a small ball of dough in the centre, close tightly, scrape off excess, and unmould gently.
- Arrange the modak in a steamer with gaps between them, cover and steam for 10 minutes or until they look shiny.
