NONNA’S CHIACCHIERE RECIPE | How to Make Italian Fried Cookies | CROSTOLI
Ingredients
- Flour500 g
- Egg1
- Sunflower oil½ glass
- White wine1–1 ½ glasses
- Sugar
- Salt
Instructions
- Pour the flour onto a board and make a well in the centre. Add the egg yolk, mix with a fork, then add the sunflower oil, a pinch of sugar and a pinch of salt, and mix well.
- Add up to one glass of white wine and combine by hand. Knead for at least 6 to 8 minutes until the dough is a smooth, soft ball; if it is dry and hard, add more wine.
- Pat the dough down, cover it with a large bowl and let it rest so no air gets in.
- Dust the board with flour. Cut off a small piece of dough, then roll it through a pasta machine on a thick setting 3 to 4 times, then thin it gradually until the strip is thin but not too thin, and smooth.
- Pass the strip lightly through flour on both sides. Cut small rectangles with a ravioli cutter and pinch the middle of each to form bows.
- Heat a good amount of olive oil in a small, deep pot. Fry several pieces at a time for less than a minute, turning them with a slotted turner until lightly browned.
- Transfer to a plate lined with paper towels to drain.
