Nutella Stuffed Cookies
Ingredients
- Chocolate spread10 tbsp
- Dark chocolate chip½ cups
- Flour1 ⅓ cups
- Baking soda½ tsp
- Salt¼ tsp
- Butter120 g
- Brown sugar⅔ cups
- Vanilla1 tsp
- Honey1 tsp
- Egg1
Instructions
- Mix the flour, baking soda and salt in a bowl and set aside.
- Melt the butter in a heatproof bowl in the microwave on high for 30 seconds, then stir until fully melted and milky rather than clear yellow.
- Stir in the sugar, vanilla and honey until combined. Add the egg and stir until it looks like caramel.
- Add the flour mixture and stir until combined. The dough should be slightly warm and too soft to roll into balls. Cover and refrigerate for 1.5 hours until firm enough to roll into a log.
- Line a small tray with baking paper. Spread spoonfuls of Nutella into rounds about 8 mm thick and freeze for 1 hour until firm enough to pick up.
- Preheat the oven to 180°C/350°F (160°C fan-forced). Grease 2 trays and line them with paper.
- Shape the chilled dough into a log about 18 cm long and cut it into 10 equal pieces.
- Flatten a piece of dough, press in a frozen Nutella disc, and wrap the dough around it to seal. Turn it smooth side up and shape into a round about 1.5 cm thick. Press chocolate chips into the top and sides. Repeat to make 10 cookies.
- Place 5 cookies on each tray, spaced about 8 cm apart. Bake both trays together for 12 to 13 minutes, until the edges are golden and the centre is pale golden and just set.
- Leave on the tray for 10 minutes, then move to a rack and cool for at least 5 more minutes.
