Oatmeal Fig Bars
Ingredients
- Dried fig · chopped1
- Orange juice2 tbsp
- Vanilla1 tsp
- Coconut oil · melted⅓ cups
- Maple syrup¼ cups
- Brown sugar½ cups
- Egg1
- Oats1
- Whole wheat flour1 cup
- Baking powder1 tsp
- Cinnamon · ground¾ tsp
- Nutmeg · ground¼ tsp
- Salt¼ tsp
Instructions
- Preheat the oven to 350°F (177°C). Line an 8-inch (or 9-inch) square pan with parchment, leaving overhang on the sides.
- Simmer the chopped figs, water and orange juice in a saucepan over medium heat, stirring now and then, for 5 to 8 minutes until the figs are soft and have absorbed most of the liquid.
- Remove from the heat, stir in the vanilla, and cool for 5 minutes.
- Blend the fig mixture until smooth, leaving no chunks. Set aside; this makes about 1 1/4 cups of filling.
- In a large bowl, whisk together the melted coconut oil, maple syrup, brown sugar and egg.
- Add the oats, flour, baking powder, cinnamon, nutmeg and salt, and mix until combined, switching to a spoon when it gets thick.
- Press a little over 1 1/2 cups of the oat mixture evenly into the bottom of the pan.
- Spread the fig filling evenly over the base.
- Scatter the remaining oat mixture over the top and press gently into the filling.
- Bake for 25 to 30 minutes, until the top is lightly browned: about 30 minutes in an 8-inch pan or 25 minutes in a 9-inch pan. Do not overbake.
- Cool completely on a wire rack.
- Lift the bars out using the parchment overhang and cut into squares.
