Oh SO YUMMY!! Vegan rice burger with teriyaki mushrooms
Ingredients
- Soy sauce3 tbsp
- Mirin3 ½ tbsp
- Maple syrup1 ½ tbsp
- Ginger1 tsp
- Vegan mayonnaise3 tbsp
- Sriracha sauce
- King oyster mushroom4
- Rice · cooked4 cups
- Vegetable oil
- Avocado
- Nori seaweed4
Instructions
- Make the teriyaki sauce: whisk together 2 tablespoons soy sauce, 2 tablespoons mirin, 1½ tablespoons maple syrup, 1 teaspoon ginger juice (or grated ginger), and 1½ tablespoons water until well combined.
- Make the rice-bun glaze: whisk 1½ tablespoons mirin and 1 tablespoon soy sauce together.
- Make the sriracha mayo: mix 3 tablespoons vegan mayonnaise with sriracha to taste until combined.
- Clean the mushrooms with a brush and cut off the caps (save them for another dish). Halve the stems crosswise.
- Boil the stem pieces in salted water for 5 to 8 minutes, until the skin turns from white to grayish. Move them to an ice bath to cool, then drain and pat dry.
- Slice each stem lengthwise, then continue slicing in a spiral to make a cutlet. Score one side so it uncurls, then pat dry again.
- Heat a drizzle of oil in a large nonstick skillet over medium heat. Sear the cutlets for about 4 to 6 minutes total until browned on both sides, pressing with a spatula if they curl.
- Dip each cutlet in the teriyaki sauce, return it to the pan, and sear until browned and charred. Repeat with another coat if you like. Transfer to a plate and clean the skillet.
- Shape the rice: line a small straight-sided bowl or ramekin (about 3 inches across) with plastic wrap, add ½ cup cooked cooled sushi rice, and press firmly with the back of a spoon into a patty. Repeat with the rest of the rice.
- Lightly grease a nonstick skillet and set it over medium-low heat. Add as many patties as fit and cook undisturbed for 5 to 8 minutes until browned. Flip and cook 2 minutes, then brush the browned side with teriyaki sauce and cook another 2 to 3 minutes until slightly charred, basting a couple more times. Cool on a wire rack. Repeat with the remaining patties.
- Assemble each burger: put a rice patty on a plate, top with avocado slices and a nori sheet, then pile on 2 mushroom cutlets and some sriracha mayo. Close with another rice patty. Repeat for four burgers in total.
