Ingredients

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. Heat the olive oil in a pan over medium heat. Sauté the chopped onion for 5–6 minutes until soft and lightly golden. Add the crushed garlic and cook for 1–2 minutes more until fragrant. Remove from heat and let cool slightly.
  3. In a large bowl, combine the ground beef, sautéed onion and garlic, ketchup, Worcestershire sauce, eggs, milk, breadcrumbs, parsley, Italian seasoning, salt and pepper. Mix gently until just combined, without overmixing.
  4. Shape the mixture into a loaf on the prepared tray, smoothing the top and sides.
  5. Bake uncovered for 40 minutes, until the top begins to brown.
  6. Meanwhile, whisk together the ketchup, brown sugar, Worcestershire sauce and optional garlic and onion powders for the glaze.
  7. Spread the glaze over the top of the meatloaf, return it to the oven and bake 10–20 minutes more, until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra parsley if desired.
