Ingredients

Instructions

  1. Tear the mushrooms into a bowl, scatter over 15g of sea salt and scrunch them together. Leave for 30 minutes, scrunching occasionally.
  2. Rub the cold butter into the flour with a pinch of salt until it resembles breadcrumbs. Make a well, slowly pour in 200ml of cold water and mix, pat and bring together into a dough.
  3. Wrap the pastry in clingfilm and chill in the fridge for 1 hour.
  4. After 30 minutes, squeeze the mushrooms firmly to remove as much salty liquid as possible, until they weigh about 400g.
  5. Peel the swede, potatoes and onion and slice them into small pieces roughly the size and thickness of a pound coin.
  6. Mix the vegetables with the mushrooms, then add the rosemary and a few generous pinches of black pepper.
  7. Preheat the oven to 180°C/350°F/gas 4.
  8. Divide the pastry into 8 and roll each into a 20cm round on a floured surface. Divide the filling between them, piling it on one side of the middle and leaving a 2.5cm border.
  9. Brush the bare pastry with beaten egg, fold over, press the edges down and crimp to seal.
  10. Egg-wash the pasties, place on a lined baking sheet and bake for 40 minutes, until golden.
