Once You Try Cinnamon Rolls This Way, You Won't Go Back

Ingredients

Instructions

  1. Warm the milk and water in a microwave-safe bowl to 115°F (46°C), stirring before you check the temperature.
  2. Pour the warm liquid into a large bowl or a stand mixer bowl. Sprinkle in the yeast and 1 teaspoon sugar, stir, and wait 5 to 10 minutes until foamy. If it does not foam, start over.
  3. Add the 1/3 cup sugar, mashed potato, eggs, 1 1/2 teaspoons salt and about 3 cups (375 g) flour, and stir until combined.
  4. Add the 6 tablespoons softened butter one tablespoon at a time, mixing until each piece is fully incorporated before adding the next.
  5. If using a stand mixer, switch to the dough hook and gradually add the remaining flour until the dough starts to pull away from the bowl. The dough should be soft and slightly tacky, not sticky; you may need more or less flour.
  6. Knead until smooth and elastic: about 5 minutes with a stand mixer, or about 10 minutes by hand on a lightly floured surface, adding flour if needed.
  7. Place the dough in a lightly oiled bowl, turn to coat, cover, and let rise in a warm, draft-free spot until doubled, about 1 to 2 hours.
  8. Meanwhile, whisk together 1/2 cup brown sugar, 1 tablespoon cinnamon and 1/4 teaspoon salt. Soften the 4 tablespoons butter and grease a 13x9-inch (33x23 cm) baking dish.
  9. Punch the dough down, transfer it to a lightly floured surface and roll into a 20x8-inch (50x20 cm) rectangle. Spread the softened butter over it, leaving a 1/2-inch (1.5 cm) border, then sprinkle the filling evenly and press it gently into the butter.
  10. Roll the dough tightly into a log starting from a long edge, pinch the seam closed, and cut into 12 even slices. Arrange them in the dish in four rows of three.
  11. Cover and let rise in a warm place for about 30 minutes. Meanwhile, preheat the oven to 350°F (175°C).
  12. Bake for 27 to 30 minutes, until the top is very lightly golden and the center roll reaches 180-185°F (84°C) internally.
  13. For the icing, beat the softened cream cheese and 2 tablespoons butter until smooth, then gradually add 1 cup powdered sugar, 1/2 teaspoon vanilla and 1 tablespoon milk, mixing until creamy.
  14. Let the rolls cool at least several minutes in the pan, then spread the icing over them.
