Ingredients

Instructions

  1. Chill the butter in the freezer for 10 to 20 minutes before you start.
  2. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  3. Mix the flour, baking powder, sugar and salt in a large bowl.
  4. Grate the very cold butter into the flour mixture (or cut it in with a pastry cutter), until the mix looks like coarse crumbs.
  5. Add the milk and stir with a wooden spoon or spatula until just combined, without overworking the dough.
  6. Turn the dough onto a well-floured surface and gently bring it together with your hands. If it is too sticky, add flour until it is manageable.
  7. Fold the dough in half, flatten gently, turn it 90 degrees and repeat 5 to 6 times, working it gently.
  8. Flatten the dough with your hands (no rolling pin) to 1 inch thick. Dust a 2¾-inch round cutter with flour.
  9. Press the cutter straight down into the dough without twisting, and place each biscuit on the prepared sheet less than ½ inch apart.
  10. Gather the scraps, gently reshape and cut out one or two more biscuits until you have at least 6.
  11. Bake at 425°F for 12 minutes, or until the tops are just beginning to turn light golden.
  12. Brush with melted salted butter straight from the oven if you like, and serve warm.
