One-Pan Baked Sausages & Lentils
Ingredients
- Extra virgin olive oil3 tbsp
- Shallot4
- Garlic3
- Cumin1 tbsp
- Lentil1 ½ cups
- Carrot4
- Salt1 tsp
- Black pepper¾ tsp
- Chicken broth3 cups
- Sausage8 x 85 g
Instructions
- Preheat the oven to 200°C/400°F (180°C fan).
- Use a metal roasting pan about 23 x 33 cm / 9 x 13 in. Cut 4 slits of about 10 cm / 4 in in a sheet of parchment paper folded in half and large enough to cover the pan, to act as steam vents. Foil also works if you tear vents in it.
- On the stovetop over medium-high heat, warm the olive oil in the pan. Add the shallots and garlic and cook for 3 minutes until soft. Add the cumin seeds and stir for 1 minute.
- Add the puy lentils, carrots, salt, pepper and stock, and bring to a simmer.
- Gently place the sausages on top without pressing them in. Cover with the paper, pressing lightly so it sits on the stock.
- Bake on the middle shelf for 25 minutes. Remove the paper and bake for 20 more minutes to brown the sausages.
- Rest for 5 minutes out of the oven before serving.
