One-Pan CREAMY Chicken Pasta | Healthy 30 Minute Recipe

Ingredients

Instructions

  1. Heat a large frying pan over medium heat and add the olive oil.
  2. Pat the chicken breasts dry, cut them into 2.5 cm (1 inch) thick bite-sized pieces and season with salt and pepper.
  3. When the oil is hot, add the chicken in a single layer and fry 2 minutes per side. Remove and set aside; it does not need to be fully cooked.
  4. In the same pan over the same heat, add the chopped onion and garlic and stir continuously.
  5. After 3 to 4 minutes, when the onion and garlic are lightly softened, add the oregano and thyme, season with salt and pepper, then add the broth and bring to a high heat.
  6. When it boils, add the pasta, stir, and stir every 2 to 3 minutes so it does not stick.
  7. After the pasta has cooked for 9 minutes, return the chicken and its juices to the pan and stir to distribute. Cover, lower to medium-low heat and simmer 3 to 4 minutes until the chicken is cooked through and the pasta is al dente.
  8. Remove the lid and take the pan off the heat. Let it cool slightly for 2 to 3 minutes.
  9. Stir in the room-temperature Greek yogurt, grated cheese, chives and lemon juice, season with black pepper and mix gently.
  10. Serve straight from the pan or in bowls, topped with chives.
