Zubereitung
- Put the chicken in a bowl with the garlic powder, onion powder, salt, black pepper and olive oil, rub it in and set aside.
- Thinly slice the mushrooms, finely chop the garlic and shallot, and thinly slice the green onions, keeping the whites and greens apart.
- In a small bowl, mix the miso, chicken bouillon powder and mirin well and set aside.
- Heat the oil in a large pan over medium-high heat until very hot. Place the chicken skin-side down in one layer and sear for 2 minutes, until golden brown. Flip and cook 4 to 5 minutes more, until cooked through. If there is too much fat, wipe out the excess with a paper towel. Remove the chicken and set aside.
- In the same pan, cook the garlic, shallot and green onion whites for 1 minute, until fragrant. Add the butter, mushrooms and a pinch of salt, and stir-fry for 5 minutes, until the mushrooms are nicely browned.
- Add the miso mixture and sauté for 1 minute, stirring constantly. Pour in the heavy cream and stir. When it starts to bubble, lower the heat to medium-low and simmer gently for 4 to 5 minutes.
- Add the Parmigiano-Reggiano and a few shakes of black pepper. Simmer 1 minute, until the cheese has melted and the sauce is smooth. Taste and add salt if needed.
- Return the chicken and its resting juices to the pan and toss until evenly coated in the sauce. Garnish with the green onion greens and serve with pasta, rice or bread.
