one pan zucchini & sausage baked orzo with hot honey & feta
Ingredients
- Hot italian sausage1 lb
- Zucchini · shredded2
- Onion · finely diced½
- Bell pepper · diced1
- Sweet corn · frozen1 cup
- Garlic · finely minced4 cloves
- Salt1 ½ tsp
- Black pepper · ground
- Soup pasta1 lb
- Chicken broth3 ½ cups
- Lemon
- Mozzarella cheese · shredded1 ½ cups
- Feta cheese4–6 oz
- Honey · for drizzling
- Basil
Instructions
- Preheat the oven to 400°F.
- Remove the sausage casing and brown the meat in a large oven-safe skillet over medium-high heat, breaking it into large chunks, for 5 to 7 minutes until golden. Transfer to a plate.
- Lower the heat to medium, adding oil only if needed. Add the zucchini, onion, bell pepper, corn, garlic and salt. Cook, stirring now and then, for about 10 minutes until the zucchini is caramelised and the pan is fairly dry.
- Add the orzo, chicken broth, lemon juice, salt and black pepper, and stir well. Return the sausage to the pan.
- Bake uncovered for 12 to 15 minutes, until the liquid is mostly absorbed and the orzo is cooked through.
- Take the pan out and stir in 3/4 cup of the mozzarella, then spread evenly. Scatter the remaining 3/4 cup mozzarella and the crumbled feta on top.
- Bake for 5 to 8 minutes until the cheese has melted. Then switch to the broiler and broil for 1 to 2 minutes, until the cheese is lightly golden in spots.
- Finish with hot honey, basil, lemon zest, flaky sea salt and black pepper. Serve at once.
