One-Pot Chicken Bredie

Ingredients

Instructions

  1. Heat a large pot over medium-high heat with a splash of oil. Brown the seasoned chicken pieces on all sides, then take them out and set aside.
  2. Fry the diced onion in the pot until golden brown. Add the sliced red chillies and garlic and cook for 30 seconds. Stir in the tomato paste and cook for another 30 seconds. (Tip: 2 teaspoons of crushed dried chilli can replace the fresh chilli.)
  3. Stir in the two 410 g cans of Rhodes Cape Malay Style Tomatoes & Onion in Curry Sauce, 1 cup of water and 1 tablespoon of sugar. Return the chicken to the pot, making sure it is covered by the tomato mixture, and simmer for 40 minutes until the bredie is thick but still saucy.
  4. When the chicken is cooked through and the sauce is thick, season to taste and remove the pot from the heat.
