Ingredients

Instructions

  1. Rinse the ribs, cut them into single pieces along the bones, and pat dry with paper towels.
  2. Heat oil in a large heavy pot over medium-high heat. Season the ribs with salt and pepper and sear them until browned on both sides, about 5 minutes per side, in two batches if needed. Set the ribs aside.
  3. In the same pot, add the onion and 1/2 cup water, scraping up the browned bits from the bottom. Lower the heat to medium and cook for about 5 minutes, until the onion is softened and lightly browned.
  4. Mix the sauce ingredients in a bowl: gochujang, gochugaru, mirin, soy sauce, honey, sesame oil, garlic, ginger.
  5. Pour the sauce into the pot and stir. When it sizzles, return the ribs and add 5 cups of water, making sure the ribs are covered. Cover, bring to a boil on high, then reduce to medium and simmer for 40 minutes, stirring occasionally.
  6. Stir in the rice, making sure it is submerged in the liquid. Cover, reduce to medium-low and simmer for 20 minutes, then lower to low and simmer 10 more minutes.
  7. Take the pot off the heat and let it rest, covered, for 10 minutes.
  8. Stir the rice and ribs, then garnish with chopped green onions and sesame seeds.
