- Garlic3
- Onion1
- Carrot1
- Celery1
- Ground beef1 lb
- Tomato paste2 tbsp
- Stock cube2
- Worcestershire sauce2 tsp
- Sugar¾ tsp
- Salt1 ¼ tsp
- Black pepper¼ tsp
- Italian seasoning · dried1 tsp
- Garlic powder½ tsp
- Ricotta cheese1 cup
- Milk1 tbsp
- Lasagna · dried8
- Mozzarella cheese1 ½
- Parsley2 tsp
Instructions
- Heat the olive oil in a deep pan over medium-high heat. Add the garlic, onion, carrot and celery and sauté until the onion is translucent, about 3 minutes.
- Turn the heat to high. Add the beef and cook, breaking it up with a spatula, until no red remains.
- Add about two-thirds of the passata, plus the remaining meat sauce ingredients. Bring to a rapid simmer, then lower to medium-low and simmer gently for 10 minutes.
- Preheat the oven to 180°C/350°F (160°C fan-forced).
- Pour the sauce flavourings into the passata bottle and shake to combine.
- Optional: put the ricotta in a bowl, soften it with the back of a spoon, then whisk vigorously for 20–30 seconds until it looks like whipped cream. Smooth ricotta needs little or no whisking.
- Remove the pan from the heat and scoop half the meat sauce into a bowl.
- Place one lasagna sheet over the base of the pan, then break sheets and tuck them around the sides. Spread meat sauce from the pan over the sheets.
- Add another layer of lasagna sheets and spread the reserved meat sauce over them.
- Add a third layer of lasagna sheets. Pour the topping sauce over, spread it out, add the ricotta in 12–15 dollops (if using), then sprinkle with cheese.
- Bake uncovered for 30 minutes, then rest for 10 minutes before cutting. Sprinkle with parsley (if using) before serving.
