Ingredients

Instructions

  1. Drain the tuna cans through a fine sieve over a bowl, keeping the oil, then gently flake the tuna.
  2. Heat a large frying pan over medium heat and add 3 tablespoons (45 ml) of the reserved tuna oil.
  3. After a couple of minutes, add the chopped onion and garlic and stir constantly. When the onion is translucent, after about 4 minutes, add the paprika and crushed red pepper and stir quickly.
  4. Add the tomato sauce and kalamata olives, season with sea salt and black pepper, mix and simmer.
  5. When the tomato sauce has slightly thickened, after about 3 minutes, add the vegetable broth. Raise the heat to high and stir gently.
  6. When the broth reaches a boil, add the penne and stir every 2 to 3 minutes.
  7. After the pasta has cooked for 9 minutes, cover the pan, lower to low-medium heat and simmer for 3 to 4 minutes until the pasta is al dente. Then turn off the heat and remove the lid.
  8. Add the flaked tuna, chopped parsley and lemon juice, and mix until well combined. Serve straight from the pan or transfer to serving dishes.
