Ingredients
- Green bean2 cups
- Garlic5
- Olive · pitted½ cups
- Salt½ tsp
- MSG¼ tsp
- Black pepper
- Vegetable oil5 tbsp
- Egg1
Instructions
- Cut the long beans into 5 cm (2 inch) lengths.
- Pulse the garlic, olives, salt and MSG in a food processor, or chop them finely by hand.
- Heat a large frying pan on high until it starts to smoke, then drizzle in the neutral oil.
- Add the beans and stir-fry quickly. After 30 seconds to 1 minute, they should start to lightly blister.
- Lower the heat to medium, add the olive and garlic mixture, and fry until it turns crispy. Add more oil if needed.
- For the crispy egg, heat a frying pan on high until smoke rises, drizzle in oil and crack the egg into the centre.
- Tilt the pan and spoon the hot oil over the egg whites until they are crisp and cloud-like. Keep oil off the yolk if you want it runny.
- The egg is ready when it slides off the pan easily after a gentle scrape with a metal spatula.
- Serve the beans and egg with warm rice.
