Orange Chicken
Ingredients
- Chicken thigh · boneless skinless600 g
- Soy sauce4 tbsp
- Ginger · finely grated1 ½ tsp
- White pepper0.13 tsp
- Cornstarch2 tbsp + ¾ cups + 1 ½ tbsp
- Vegetable oil¾–1 cup
- Orange2 tsp
- Orange juice1 cup
- Shaoxing wine2 tbsp
- Rice wine vinegar2 tbsp
- Sugar⅓ cups + 2 tbsp
- Salt¼ tsp
- Garlic2
- Rice
- Scallion1
- Sesame seed
Instructions
- Whisk the cornflour and soy sauce in a large jug until smooth, then whisk in the remaining sauce ingredients except the garlic and orange zest. Set aside.
- In a large bowl, mix the chicken with the soy sauce, ginger, white pepper and 2 tablespoons cornflour until well coated.
- Add the 3/4 cup cornflour and toss, separating pieces as needed so each one is coated.
- Pick up a few pieces at a time and press them firmly in your fist, then place them in a colander. Repeat with the rest, then shake the colander to remove excess cornflour.
- Heat 3/4 to 1 cup oil (about 1/2 cm deep) in a large deep non-stick pan on high heat. Fry half the chicken at a time for 1 1/2 minutes per side until deep golden and crispy. Drain on paper towel and repeat with the rest.
- Pour out all but 2 tablespoons of oil and remove loose crispy bits. Return the pan to medium-high heat and sauté the garlic for 20 to 30 seconds until light golden.
- Whisk the sauce again, pour it into the pan and simmer 1 to 2 minutes until thick and glossy like honey. Stir in the orange zest.
- Return the chicken to the pan and toss quickly to coat. Serve over rice, topped with green onion.
