- Oil2 tbsp
- Orange
- Sugar½ cups
- Vanilla½ tsp
- Chia seed3–4 tbsp
- Flour1 ¼ cups
- Baking soda¼ tsp
- Baking powder2 tsp
- Salt¼ tsp
- Cranberry · frozen½ cups
Instructions
- Blend all the wet ingredients except the chia seeds. Stir in the chia seeds and let sit for 10 minutes so they soften.

- Put the dry ingredients in a blender and pulse a few times, or whisk them together in a bowl. Add to the wet ingredients and mix until combined. The batter should be slightly flowing but not runny; if too runny, add a tablespoon or more of flour and mix in.
- Spoon the batter into the lined muffin pan. Top with cranberries or other berries, and sprinkle with chia seeds if you like.
- Bake for 20 to 22 minutes.
- Cool in the pan for 5 minutes, then on the counter for a few minutes before serving.
