Ingredients
- Cooking spray
- Streusel topping
- Flour2 ¾ cups
- Brown sugar½ cups
- Cinnamon · ground½ tsp
- Butter · melted6 tbsp
- Extra virgin olive oil½ cups
- Greek yoghurt½ cups
- Maple syrup½ cups
- Egg2
- Orange½ tsp
- Orange juice⅓ cups + 1 tbsp
- Vanilla2 tsp
- Baking powder1 tsp
- Baking soda½ tsp
- Salt½ tsp
- Chocolate chip½ cups
- Sugar½ cups
Instructions
- Preheat the oven to 350°F. Grease a 9-inch round springform pan generously with cooking spray, or line a 9-inch round or 8x8-inch square pan with parchment and spray it.
- For the streusel, mix the flour, brown sugar and cinnamon in a medium bowl, then stir in the melted butter with a fork until it forms wet-sand clumps; use your fingers if needed to make thick clumps. Cover and refrigerate.
- In a large bowl, whisk the olive oil, Greek yogurt, maple syrup, eggs, orange zest, orange juice and vanilla until smooth, about 1 minute.
- In a medium bowl, whisk the 1 ¾ cups (210 g) flour, baking powder, baking soda and salt. Add to the wet ingredients and mix with a wooden spoon just until combined; do not overmix. Fold in the chocolate chips.
- Spread the batter evenly in the prepared pan, then sprinkle the streusel evenly over the top.
- Bake until a tester inserted in the centre comes out clean with a few crumbs attached, 40 to 50 minutes. Let the cake cool almost completely.
- For the glaze, mix the powdered sugar, 1 tablespoon orange juice and ½ teaspoon orange zest with a fork until smooth and drizzlable. Drizzle back and forth over the cooled cake.
- Cut into 10 to 12 slices.
